30-day Bran Muffins

Ingredients

  • 2 cups boiling water
  • 2 cups 100% bran cereal
  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1 quart buttermilk
  • 5 cups sifted flour
  • 1 tbsp. Salt
  • 5 tsp. Soda
  • 4 cups bran flakes

Directions

  1. Cover bran cereal in boiling water. Set aside. Cream butter and sugar. Add eggs. Add soaked bran cereal. Alternate adding buttermilk and sifted dry ingredients. Add bran flakes and stir gently. Bake 350 for 20 minutes. Keeps in the fridge for up to 30 days.
