Ingredients
- 8 ounces lasagna noodles
- 1/2 lb. ground beef
- 1/4 C chopped onion
- 6-oz can tomato paste
- 8-oz can tomato sauce
- 1/2 C canned mushrooms or 1 C fresh
- 1 clove garlic, crushed
- 1 t dried crushed sweet basil
- 1t dried parsley flakes
- 1 t salt
- 1/2 t leaf oregano
- 1/4 t pepper
- 2 C creamed cottage cheese
- 1 C chopped raw spinach
- 1/4 C diced salami
- 1 egg
- 1 C shredded Mozzarella cheese

Oven 350 degrees.

Cook lasagne noodles as directed on package. Brown beef with onion in skillet. Add tomato paste and sauce, mushrooms, garlic, basil, parsley, 1/2 t salt, oregano, 1/8 t pepper. Simmer 1 hour. Combine cottage cheese, spinach, salami, egg, 1/2 t salt and 1/8 t pepper. In 12X8-inch baking dish alternate layers of 2 thicknesses of noodles, cottage cheese mixture and Mozzarella cheese, ending with cheese. Bake at 350degrees for 30 minutes. Remove from oven and let stand 156 minutes before serving.
- Tip: Sprinkle 1/4 C grated Parmesan cheese over casserole just before baking.
- Note: recipe also calls for 1 1/2 C water to be added with the tomato products. I leave that out because I think it makes it a little soupy.
