Pumpkin Soup

Ingredients

  • Meat from one small pie pumpkin
  • 1 qt chicken stock
  • 1 celery stalk strings removed
  • 1 lg onion finely chopped
  • 1/4 c finely chopped green pepper
  • 1 clove garlic chopped
  • 1/2 Tbs tarragon
  • dash Worcestershire sauce
  • splash of cooking sherry
  • 1 c half & Half
  • 1Tbs butter

Directions

  1. Sauté: finely chopped onion, green pepper, garlic and celery in butter and sherry until golden. Blend in blender: sautéed vegetables, 1 c stock, 1 c pumpkin, tarragon and Worcestershire sauce. Return blended mix to stock pit with remaining stock and pumpkin and blend. Stir in half/half – reheat and serve.
