Potato Leek Soup

Ingredients

  • 3 med potatoes
  • 3 c chopped leeks (cleaned)
  • 1 celery stalk chopped
  • 1 lg carrot chopped
  • 4 Tbs butter
  • 3/4 tsp salt
  • 1/2 c stock/water
  • 3 c milk
  • Opt seasonings: thyme, marjoram, basil and pepper

Directions

  1. t chopped potatoes in sauce pan with leeks, celery, carrots and butter. Cook until butter is melted and vegetables are warm.(Add salt0. Add water(stock), bring to a boil cover and reduce heat. cook until potatoes are soft(add extra water/stock if necessary). After potatoes are soft, blend or mash with milk. When utterly smooth return to the sauce pan and add spices. Heat up to hot bot not b oiling. Serve immediately.
