Ingredients
- 2 tbsp. unsalted butter, divided
- 4 sirloin pork cutlets
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 small red onion, thinly sliced
- 1 garlic clove, minced
- 14.5 oz. can beef broth
- 1 tbsp. cornstarch
- 1 tbsp. Dijon
- Garnish: chopped green onion

In a large skillet, melt 1 tbsp. butter over medium-high heat. Sprinkle pork all over with salt and pepper. Add pork to skillet; cook for 5 minutes per side. Remove pork from skillet.

Melt remaining 1 tbsp. butter in skillet. Add onion; cook, stirring occasionally, until tender, about 3 minutes. Stir in garlic; cook for 1 minute.

In a small bowl, whisk together broth, cornstarch, and mustard until smooth. Stir broth mixture into skillet, and bring to a boil. Cook until thickened, about 5 minutes. Return pork to skillet, cover, and cook until cooked through, about 5 minutes. Garnish with green onion.
