Chopped Salad

Ingredients

  • 1 tbsp. butter
  • 3 oz. package chicken flavored ramen, noodles broken into pieces and flavor packet reserved
  • 1/2 cup canola oil
  • 3 tbsp. red wine vinegar
  • 2 tbsp. sugar
  • 1 tsp black pepper
  • 4 cups chopped iceberg
  • 2 cups small broccoli florets
  • 1 cup chopped carrot
  • 1 cup chopped red bell pepper
  • 1/2 cup sliced green onion

Directions

  1. In a small skillet, melt butter over medium-high heat. Add ramen noodles; cook, stirring frequently until lightly browned, about 3 minutes. Let cool.

  2. In a large bowl, whisk together oil, vinegar, sugar, pepper, and reserved ramen flavor packet. Add lettuce and all remaining ingredients; toss until well combined. Sprinkle with ramen noodles, and serve immediately.
