Ingredients
- 1 lb lean ground beef
- 1 medium onion, finely chopped
- 1 apple, peeled and grated
- 1/2 cup fresh white bread crumbs
- 1 tbsp chopped fresh parsley
- 1 chicken stock cube, finely crumbled
- 2 tbsp cold water
- salt and pepper
- 2 tbsp vegetable oil
- Sweet and Sour Sauce
- 1 tbsp soy sauce
- 1 1/2 tsp cornstarch
- 1 tbsp vegetable oil
- 1 medium onion, finely chopped
- 1/2 cup chopped sweet red pepper
- 14 oz can of chopped tomatoes
- 1 tbsp malt vinegar
- 1 tsp brown sugar

Directions

Mix together all ingredients for the meatballs, except veg oil, and chop for a few seconds in a food processor

Using floured hands, form into about 20 meatballs

Heat oil in frying pan and saute the meatbals for 10-12 minutes until browned

Meanwhile, to make the sauce, mix the soy sauch and cornstarch in a small bowl

Heat the oil in a pan and saute the onions for 3 minutes

Andd the red pepper and saute for 2 minuts

Add the tomatoes, vinegar, and sugar; season with pepper and simmer for 10 minutes

Ad the soy sauce mixture and cook for 2 minutes stirring occasionally

Blend and puree the sauce

Pour the sauce over the meatballs, cover, and simmer for aobut 5 minutes until cooked through
