Ingredients
- 2 boneless, skinless chicken breasts, chopped
- 1 tbsp chopped fresh parsley
- 1 medium onion, finely chopped
- 2 apples, peeled and grated
- 2 medium or 1 large zucchini, grated
- 1 chicken stock cube, crumbled
- salt and pepper
- 1/2 cup all purpose flour
- 2 eggs lightly beaten
- 1 cup bread crumbs
- vegetable oil
Directions

Place the chicken, parsley, and onion in a food processor and chop for a few seconds on pulse

Squeeze the excess moisture from the apples and zuchinni, and mix into the chicken together with the crumbled stock cube and a little salt and pepper.

Using your hands, form into burgers

Coat in flour, then in beaten eggs, and coat with bread crumbs

Heat the oil in a large frying pan and saute the burgers until golden, about 6 minutes on each side
