Chicken burgers with Zucchini and Apple

Ingredients

  • 2 boneless, skinless chicken breasts, chopped
  • 1 tbsp chopped fresh parsley
  • 1 medium onion, finely chopped
  • 2 apples, peeled and grated
  • 2 medium or 1 large zucchini, grated
  • 1 chicken stock cube, crumbled
  • salt and pepper
  • 1/2 cup all purpose flour
  • 2 eggs lightly beaten
  • 1 cup bread crumbs
  • vegetable oil

Directions

  1. Place the chicken, parsley, and onion in a food processor and chop for a few seconds on pulse

  2. Squeeze the excess moisture from the apples and zuchinni, and mix into the chicken together with the crumbled stock cube and a little salt and pepper.

  3. Using your hands, form into burgers

  4. Coat in flour, then in beaten eggs, and coat with bread crumbs

  5. Heat the oil in a large frying pan and saute the burgers until golden, about 6 minutes on each side
