Souffled Welsh Rarebit

Ingredients

  • 4 eggs, separated
  • 1/3 lb. shredded cheddar cheese
  • 1 tsp. brown mustard
  • Dash Worchester sauce
  • Dash hot sauce
  • Salt and ground black pepper, to taste
  • 4 slices toasted bread OR 2 English muffins, split and toasted

Directions

  1. Heat oven to 450 degrees.

  2. In a large bowl, whisk 3 egg yolks (discard or save he remaining yolk for another use), the cheese, mustard, Worcestershire sauce, hot sauce, salt and pepper until combined.

  3. Whip the four egg whites until stiff peaks form.

  4. Add a large spoonful of the whipped egg whites to the cheese mixture and gently stir to combine. Using a rubber spatula, fold in the remaining egg whites; try to keep the mixture as fluffy as possible.

  5. Place toast or English muffins in baking pan. Divide the egg-cheese mixture evenly among bread, spreading gently to cover.

  6. Bake at 450 degrees for 10 to 15 minutes or until lightly browned and slightly puffy.
