Linguine with Spring Vegetables

Ingredients

  • 8 oz linguine
  • 2 tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 1 clove garlic, crushed
  • 1 cup finely diced carrot
  • 1/2 cup finely diced sweet red peper
  • 1 cup finely diced zucchini
  • 3 tomatoes, peeled, seeded and chopped
  • 2 scallions, finely sliced
  • 1 chicken stock cube dissolved in 1 1/2 cups boiling water
  • 1 1/2 tbsp soy sauce
  • salt and pepper

Directions

  1. Cook the linguine in a large pot of lightly salted boiling water according to he instructions on the package

  2. Meanwhile, heat the oil in a wok or frying pan and saute the onion and garlic for 3 minutes, stirring occasionally

  3. Add the carrot, red pepper, and zucchini and cook, stirring occassionally for 4 minutes

  4. Add the tomatoes and scallions and cook, stirring for 2 minutes

  5. Pour in the chicken stock and soy sauce and cook for 1 minute, season to taste

  6. Drain the pasta and toss with the sauce
