Ingredients
- 8 oz linguine
- 2 tbsp vegetable oil
- 1 medium onion, finely chopped
- 1 clove garlic, crushed
- 1 cup finely diced carrot
- 1/2 cup finely diced sweet red peper
- 1 cup finely diced zucchini
- 3 tomatoes, peeled, seeded and chopped
- 2 scallions, finely sliced
- 1 chicken stock cube dissolved in 1 1/2 cups boiling water
- 1 1/2 tbsp soy sauce
- salt and pepper
Directions

Cook the linguine in a large pot of lightly salted boiling water according to he instructions on the package

Meanwhile, heat the oil in a wok or frying pan and saute the onion and garlic for 3 minutes, stirring occasionally

Add the carrot, red pepper, and zucchini and cook, stirring occassionally for 4 minutes

Add the tomatoes and scallions and cook, stirring for 2 minutes

Pour in the chicken stock and soy sauce and cook for 1 minute, season to taste

Drain the pasta and toss with the sauce
