Buttery Pecan Cookies

Ingredients

  • 1 cup flour
  • 1/2 tsp baking soda
  • 1 cup sugar
  • 1 stick salted butter, at room temp
  • 1 large egg
  • 1 1/2 tsp pure vanilla extract
  • 3/4 cup chopped pecans

Directions

  1. Preheat oven to 375. In bowl, whisk flour and baking soda. In another large bowl, beat sugar and butter until creamy, about 2 minutes. Beat in egg and vanilla, then flour mixture. Stir in pecans. Place tbsp fuls of dough on 2 parchment-lined baking sheets, spacing 1 1/2 inches apart. Bake until golden brown, about 12 minutes. Cool on sheets on racks.
