Pumpkin and Cream Cheese Cupcakes

Ingredients

  • 1 cup pure pumpkin
  • 1 stick salted butter, melted
  • 2/3 cup sugar
  • 2 large eggs, beaten
  • 1 1/2 tsp pumpkin pie spice
  • 1 1/2 tsp pure vanilla extract
  • 1 1/2 cups self-rising flour
  • 1 1/2 cups confectioners' sugar
  • 2 oz. cream cheese, at room temp
  • Toasted, salted pepitas, for garnish

Directions

  1. Preheat oven to 375.

  2. In a large bowl, whisk first 5 ingredients and 1 tsp vanilla. Stir in flour. Divide among 12 lined muffin cups.

  3. Bake until springy when touched, 15-20 minutes. Let cool.

  4. In bowl, beat confectioners’ sugar, cream cheese, and remaining 1/2 tsp vanilla. Frost cupcakes; garnish.
