Spinach, Arugula, and Apple Salad with Cider Vinaigrette

Ingredients

  • Vinaigrette:
  • 1/4 cup cider vinegar
  • 1/4 cup olive oil
  • 1 tbsp. Dijon
  • 1 tbsp. honey
  • 2 tsp minced shallots
  • Salt and pepper, to taste
  • Salad:
  • 5 cups stemmed fresh spinach
  • 5 cups arugula
  • 1 Pink Lady apple, cubed
  • 1/2 cup chopped pecans, toasted

Directions

  1. For the vinaigrette, whisk together vinegar, oil, Dijon, honey, and shallots; season with salt and pepper.

  2. For the salad, toss spinach, arugula, apple and pecans in a large bowl with vinaigrette.
