Ingredients
- 3 lb. sweet potatoes, peeled and cubed
- 1 cup sour cream
- 1 stick unsalted butter
- 4 garlic cloves, minced
- 1 large jalapeno, seeded and minced
- Minced zest of 1/2 a lime
- 1 tbsp. fresh lime juice
- Salt to taste
Directions

Cook sweet potatoes in a large pot of boiling salted water until fork-tender, 12-15 minutes.

Drain potatoes; return to pot and cook over low heat, stirring to remove excess moisture, 2 minutes.

Add sour cream, butter, garlic, jalapeno, zest, and lime juice to pot, then mash potatoes to desired consistency; season with salt.
