Mashed Sweet Potatoes with Lime, Garlic, and Jalapeno

Ingredients

  • 3 lb. sweet potatoes, peeled and cubed
  • 1 cup sour cream
  • 1 stick unsalted butter
  • 4 garlic cloves, minced
  • 1 large jalapeno, seeded and minced
  • Minced zest of 1/2 a lime
  • 1 tbsp. fresh lime juice
  • Salt to taste

Directions

  1. Cook sweet potatoes in a large pot of boiling salted water until fork-tender, 12-15 minutes.

  2. Drain potatoes; return to pot and cook over low heat, stirring to remove excess moisture, 2 minutes.

  3. Add sour cream, butter, garlic, jalapeno, zest, and lime juice to pot, then mash potatoes to desired consistency; season with salt.
