Pistachio Cake

Ingredients

  • 1 white cake mix (I used Betty Crocker)
  • 1 package JELL-O instant pistachio pudding (easier to find in large suburban supermarkets)
  • 1/2 cup oil
  • 1 cup club soda
  • 3 eggs
  • 1 cup chopped walnuts

Directions

  1. Mix all ingredients except nuts for 2 minutes on medium.

  2. Add in nuts and pour into well-greased 10" tube pan.

  3. Bake one hour or until done (mine was ready after 45 min) at 350 F.

  4. Let stand until cool. Slice into three horizontal layers.

  5. Beat 2 minutes at high speed:

  6. 1 pint medium cream or half & half (I used the latter)

  7. 1 cup milk

  8. 2 packages JELL-O instant pistachio pudding

  9. Spread frosting on bottom layer, add the second tier. Spread frosting again and add the top. Cover cake with remaining frosting.
