Glazed Meatloaf

Ingredients
- 1 cup(s) quick-cooking oats
- 1/2 cup(s) fat-free (skim) milk
- 1 medium (6- to 8-ounce) onion, finely chopped
- Salt
- Pepper
- 1 large (8- to 10-ounce) red pepper, finely chopped
- 3 clove(s) garlic, crushed with press
- 2 teaspoon(s) lower-sodium soy sauce
- 1/4 cup(s) ketchup
- 2 tablespoon(s) ketchup
- 1 pound(s) 93-percent lean ground beef sirloin
- 1 pound(s) ground turkey breast
- 3 medium carrots, grated
- 2 tablespoon(s) spicy brown mustard
Directions
- Preheat oven to 400 degrees F. Line jelly-roll pan with foil; lightly coat with nonstick cooking spray. In medium bowl, stir together oats and milk until combined.
- Coat bottom of 12-inch skillet with nonstick cooking spray; heat on medium. Add onion and pinch salt; cook 2 to 4 minutes or until onion softens, stirring occasionally. Add red pepper and garlic; cook 4 to 6 minutes or until pepper softens, stirring often. Transfer to medium bowl; refrigerate to cool.
- Meanwhile, in small bowl, whisk together soy sauce and 1/4 cup ketchup.
- In large bowl, with hands, combine beef, turkey, carrots, oat mixture, cooled vegetable mixture, mustard, 2 tablespoons ketchup, pinch salt, and 1/4 teaspoon freshly ground black pepper until mixed.
- Form mixture into 8-inch by 4-inch loaf on prepared pan. Brush top and sides with soy ketchup. Bake 45 to 50 minutes or until meat thermometer inserted in center registers 165 degrees F.
