Country-Style Barbecue Ribs

Ingredients

  • 2 tbsp. paprika
  • 2 tbsp. brown sugar
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp ground chipotle pepper
  • 1 tsp pepper
  • 3/4 tsp dried thyme
  • 4 lbs. boneless country-style pork ribs
  • 18 oz. bottle barbecue sauce
  • 3/4 cup amber beer or chicken broth

Directions

  1. Preheat broiler. Mix the first 9 ingredients. Place pork in a foil-lined 15×10×1-in. pan; rub generously with seasonings. Broil 4-5 inches from heat until browned, 2-3 minutes per side.

  2. Transfer to a slow cooker. Whisk together barbecue sauce and beer; pour over ribs. Cook, covered, on LOW until tender, 3-4 hours.

  3. Remove ribs. Reserve 2 cups cooking juices; discard remaining juices. Skim fat from reserved juices. Serve with ribs.
