Ingredients
- 2 tbsp. bacon drippings
- 3 3/4 cups self-rising yellow cornmeal mix
- 1 1/2 cups shredded sharp Cheddar cheese
- 2 2/3 cups whole buttermilk
- 1 cup sour cream
- 1/2 cup unsalted butter, melted
- 3 large eggs, lightly beaten
Directions

Preheat oven to 400. Place bacon drippings in a 12-inch cast-iron skillet, and place skillet in oven to preheat. In a large bowl, stir together cornmeal mix and cheese. In a medium bowl, combine buttermilk, sour cream, melted butter, and eggs. Stir buttermilk mixture into cornmeal mixture just until combined.

Carefully remove skillet from oven, and swirl to coat bottom and sides of pan with drippings. Pour batter into hot skillet.

Bake until golden brown and beginning to pull away from sides of pan, 40-45 minutes.
