Warm Potato and Pancetta Salad

Ingredients

  • 1 tbsp. olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 lb. halved fingerling potatoes
  • 1/3 cup diced pancetta
  • 2/3 cup sliced red onion
  • 2 tbsp. red wine vinegar
  • 1 tbsp. olive oil
  • 2 tsp Dijon
  • 2 tbsp. chopped chives
  • 1 tbsp. chopped tarragon

Directions

  1. Preheat oven to 450. Combine olive oil, salt, pepper and potatoes on a baking sheet. Bake at 450 for 20 minutes. Cook pancetta in a skillet over medium 5 minutes. Add red onion; cook 2 minutes. Stir in red wine vinegar, olive oil, and Dijon. Add pancetta mixture, chives and tarragon to potatoes.
