Ingredients
- 1 tbsp. olive oil
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 lb. halved fingerling potatoes
- 1/3 cup diced pancetta
- 2/3 cup sliced red onion
- 2 tbsp. red wine vinegar
- 1 tbsp. olive oil
- 2 tsp Dijon
- 2 tbsp. chopped chives
- 1 tbsp. chopped tarragon
Directions

Preheat oven to 450. Combine olive oil, salt, pepper and potatoes on a baking sheet. Bake at 450 for 20 minutes. Cook pancetta in a skillet over medium 5 minutes. Add red onion; cook 2 minutes. Stir in red wine vinegar, olive oil, and Dijon. Add pancetta mixture, chives and tarragon to potatoes.
