Ingredients
- 6 bacon slices, diced
- 1 cup diced green peppers
- 1 cup diced yellow onion
- 3 cups peeled and diced sweet potatoes
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 lb. breakfast sausage
- 9 oz. package fresh spinach
- 12 large eggs

Preheat oven to 350.

In a saucepan over medium heat, cook the bacon until it renders a good amount of fat. Add the peppers, onion, sweet potatoes, salt, garlic powder and onion powder.

Cook for 5 minutes, stirring continuously. Add the breakfast sausage. Crumble it up as it cooks for 2-3 minutes. Add the spinach and stir until wilted. (Covering the saucepan will speed this up.)

Transfer the mixture to a 9×13-inch casserole dish, spreading it evenly and pressing down.

Crack the eggs on top. Bake until the egg whites are set and yolks are done to your liking, 5-10 minutes for slightly runny yolks or longer for firmer yolks.
