Ingredients
- 2 lb. baby potatoes
- 1 cup chopped fresh cilantro
- 1 cup fresh mint leaves
- 1/4 cup fresh lemon juice
- 1/4 cup roasted peanuts
- 1 serrano chile, sliced
- 2 tbsp plain yogurt
- 1 tbsp chopped peeled fresh ginger
- 3 tbsp butter

In a pot, boil potatoes in heavily salted water until tender, about 20 minutes; drain. In blender, puree next 7 ingredients with 1/4 cup water; season sauce. Toss potatoes with butter; season. Serve with sauce for dipping.
