Mini Cheddar Biscuits with Ham

Ingredients

  • 2 cups all-purpose flour, plus more for dusting
  • 1 tbsp. baking powder
  • 1 tsp kosher salt
  • 1/4 tsp baking soda
  • 1 stick cold unsalted butter, diced
  • 1 cup buttermilk
  • 1 cup shredded cheddar cheese
  • 1 scallion, chopped
  • Fig jam, for topping
  • 8 oz. deli-sliced ham

Directions

  1. Preheat the oven to 400. Pulse the flour, baking powder, salt and baking soda in a food processor until combined. Add the butter and pulse until the mixture looks like coarse meal. Pulse in the buttermilk, cheese and scallion until incorporated.

  2. Roll out the dough to 1/2 inch thick on a lightly floured surface, then fold in half and reroll. Cut out 1- to 2-inch rounds with a biscuit cutter. Arrange on a baking sheet and bake until golden, about 15 minutes.

  3. Split the biscuits and sandwich with fig ham and the ham.
