Yogurt-Blue Cheese Dip

Ingredients

  • 1/2 c. lowfat Greek yogurt
  • 1 tbsp. fresh lemon juice
  • 1/4 tsp. Tabasco sauce (optional)
  • Kosher salt
  • pepper
  • 1 scallion
  • 1 tbsp. chopped fresh flat-leaf parsley
  • 2 oz. blue cheese
  • cucumbers
  • radishes
  • potato chips

Directions

  1. In a bowl, whisk together the yogurt, lemon juice, Tabasco (if using), and ΒΌ teaspoon each salt and pepper.
  2. Stir in the scallion and parsley, then the blue cheese. Serve with radishes, cucumbers, and potato chips.
