Ingredients
- 1 Anaheim chile
- 1 Tbsp. vegetable oil
- 1 lb. lean ground beef
- 1 small yellow onion, fiely chopped
- Salt and pepper
- 1 clove garlic, finely chopped
- 12 6-inch flour tortillas
- 4 oz. shredded Mexican-blend cheese
- 1/2 cup salsa

Position a rack 6-inches from broiler; preheat to high. Broil chile o a rimmed baking sheet, turning as skin blisters, about 10 minutes. Place chile in a large Ziploc bag, seal and let sit for 10 minutes.

Remove chile from bag and rub with paper towels to remove skin. Slice in half and remove top and seeds. Finely chop chile.

Warm 2 tsp. oil in a large nonstick pan over medium heat. Cook beef, stirring, until no pink remains, about 6 minutes. Remove meat to a bowl and drain all but 1 tsp. fat from pan.

Pour remaining 1 tsp. oil into pan. Add onion and chile. Season with salt and pepper, then cook over medium-low heat until onion is translucent, about 6 minutes. Mix in garlic, saute 1 minute, and add beef back into pan. Season with salt and pepper. Saute until hot, about 2 minutes.

Wrap tortillas in a damp paper towel and microwave until soft, 15 to 35 seconds. Fill tortillas with meat mixture, serve with cheese and salsa.
