Ingredients
- 1 3 to 5 lb. chuck roast
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 bottle ketchup
- 1/4 cup Worcestershire sauce
- 1/4 cup white vinegar
- 2 tsp. salt
- 1 tsp. black pepper
- 2 tsp. chili powder
- 2 tsp. dry mustard
- 2 tsp. sugar
- 1/2 tsp. liquid smoke
Directions

Mix all ingredients together in a large heavy saucepan or Dutch oven. Use 1/2 cup water to rinse out ketchup bottle. Add to mixture. Bring to a boil, turn roast to coat all sides. Reduce to simmer and cook 2 hours and 30 minutes to 3 hour. Turn roast often to coat on all sides.

Remove meat from sauce about 30 minutes before serving. Cool and remove all fat and bones from the meat. Return to sauce. Simmer about 30 minutes

The sauce can be thickened with 2 to 3 Tbsp. flour, if desired. Spoon the meat and sauce over hot buttered buns or sliced of corn bread.
