Harvard Beets

I prefer to use fresh beets and roast them in the oven @ 425* 30-40 min.

Serves 4 people

Ingredients

  • 2 tablespoons cornstarch
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • pinch of pepper
  • 2/3 cup water
  • 1/2 cup vinegar
  • 2 cups sliced beets

Directions

  1. In saucepan, mix together cornstarch, sugar, salt, pepper, water, and vinegar. Heat and cook, stirring, until mixture thickens and boils gently. Continue to cook, still stirring, for 1 minute more. Stir in beets, heat thoroughly, and serve. (Good cold, too.)
