Beef Macaroni Salad

Ingredients

  • 1 Tbsp. salt
  • 3 quarts boiling water
  • 2 cups elbow macaroni (8 oz.)
  • 2 cups sliced cooked roast beef
  • 1 medium tomato, diced
  • 1/2 cup sliced sweet gherkins
  • 1/4 cup sliced scallions or green onions
  • 3/4 cup creamy French dressing
  • 2 Tbsp. sweet pickle liquid

Directions

  1. Add salt to rapidly boiling water. Gradually add macaroni so that water continues to boil.

  2. Cook uncovered stirring occasionally until tender. Drain in colander. Rinse with cold water, drain again. Combine with remaining ingredients; toss and chill Serve in lettuce cups if desired.
