Ag’s Muffins

a recipe from a friend in college, brings back good memories every time i make it. Delicious, healthy and yummy just plain, but I dress it up with butter and all fruit jam, and it’s great. I modified it to make it healthier

Cook time: 15 minutes
Serves 12 people

Ingredients

  • 2 cups whole wheat flour (or all purpose)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup splenda
  • 1/4 cup sugar
  • 1 egg, slightly beaten
  • 1 cup soymilk (or regular milk)
  • 1/4 cup melted butter

Directions

  1. Preheat oven to 400 F

  2. Mix flour, powder, salt, splenda and sugar in a bowl.

  3. Mix egg, milk, and butter in a seperate bowl.

  4. Pour milk mixture over flour mixture. Stir only enough to dampen flour.

  5. Add frozen berries (1/2 cup) or leave plain.

  6. spoon into buttered muffin tins about 2/3 full

  7. Bake for 15 minutes
