Beef Medallions with Summer Green Bean Salad and Fried Onion Rings

Ingredients

  • Bean salad
  • 1lb. trimmed haricot verts (very thin green beans)
  • 2 large, ripe tomatoes, halved, seeded and cut into thin strips
  • 1 garlic clove, minced
  • 3 Tbsp. extra-virgin olive oil
  • 2 tsp. red-wine vinegar
  • 1 Tbsp. chopped basil leaves
  • Salt and freshly ground pepper, to taste
  • Onion Rings:
  • 2 cup all purpose flour
  • 1/3 cup cornstarch
  • 1/2 tsp. ground cumin
  • 2 tsp. chile powder
  • salt
  • Vegetable oil, for frying
  • 3 medium-size onions, thinly sliced and separated into rings
  • Medallions:
  • 4 filet-mignon steaks, about 8 oz. each
  • 1/4 tsp. salt
  • 1/4 tsp. crushed fennel seed
  • 1/2 tsp. crushed black pepper
  • Worcestershire sauce
  • 1 Tbsp. olive oil
  • 1 tbsp. butter

Directions

  1. To prepare salad:

  2. Bring a large saucepan of lightly salted water to a boil. Drop in beans and simmer for 3 to 4 minutes just until tender. Drain I a colander and transfer immediately to a bowl of ice water until cool. Drain again and pat dry.

  3. Place beans in a large bowl. Add tomatoes, garlic, oil, vinegar, basil, salt and pepper. Toss together until well blended; set aside.

  4. To prepare onion rings:

  5. In a large bowl, mix together flour, cornstarch, cumin, chile powder and salt; set side.

  6. Heat oil in a deep fryer or saucepan to 350 degrees. Toss onion rings in flour mixture until well coated. Cooking in batches and using tongs, carefully lower onion rings into hot oil and fry until crisp and golden brown. Remove with a slotted spoon and drain on paper towels. Keep warm while preparing medallions.

  7. To prepare medallions:

  8. Cut steak in half horizontally to make 2 thin steaks. In a bowl, mix together salt, fennel, and pepper. Sprinkle with this mixture. Sprinkle with a few drops of Worcestershire sauce on both sides of each medallion.

  9. In a large , heavy skillet over medium-high heat, heat together oil and butter until almost smoking. Add medallions and sear for 2 to 3 minutes per side for medium-rare, 34 to 5 minutes for medium, adjusting heat as necessary.

  10. To serve, arrange two of the medallions on each serving plate, then spoon bean salad alongside. Pile onion rings on top of steaks, dividing evenly.
