Broccoli Rice Quiche

Ingredients
- 1 1/2 cups cooked rice
- 3 eggs, divided use
- 3/4 cup shredded cheese, divided use
- 1 Tbsp minced onion
- 1 ( 4oz.) jar sliced mushrooms, drained
- 1 (10 oz.) pkg. broccoli, cooked and drained
- 1/3 cup milk
- 1/4 tsp. ground black pepper
Directions

Heat oven to 375 degrees.

Combine rice 1 of the eggs and 1/2 cup of the3 cheese; mix well. Press mixture into a 9-inch pie plate; set aside.

In a large bowl combine the broccoli and all of the remaining ingredients. Mix well Pour mixture into the rice-lined pie plate. Bake 50 to 60 minutes or until set.
