Ingredients
- 2 cups flour
- 3 tbsp. sugar
- 4 tsp baking powder
- 1/2 tsp cream of tartar
- 1/4 tsp salt
- 1/2 cup cold butter, cubed
- 3/4 cup milk, plus 2 tbsp. more for brushing
- 1/2 cup shredded sharp cheddar, plus more for garnish
- 1 tbsp. chopped fresh thyme, plus more for garnish

Preheat oven to 425. Stir together flour, sugar, baking powder, cream of tartar, and salt in a bowl. Cut butter into flour mixture with a pastry blender or fork until pea size. Make a well in center of mixture. Add 3/4 cup milk to well, along with cheese and thyme, then gently stir until a soft dough forms.

Turn dough out onto a floured surface; gently pat to 1/2 inch thickness. Cut with a 2-inch biscuit cutter or glass, pressing straight down. Press scraps together once, patting to 1/2 inch thickness, and cut additional biscuits. Transfer to baking sheet. Brush tops with 2 tbsp. milk and sprinkle with additional cheese and thyme.

Bake until bottoms of biscuits are golden brown, 10-12 minutes.
