Ingredients
- 1 1/2 lb. Brussels sprouts, trimmed
- 1 cup finely diced onions
- 1/2 tsp ground ginger
- 3 tbsp olive oil
- 1/4 cup pure maple syrup
- 1/4 cup fresh lemon juice
- 1 tsp Dijon
- 1/2 cup chopped walnuts, toasted
- Salt and black pepper, to taste
Directions

Shred Brussels sprouts in a food processor using the slicing blade.

Sweat onions and ginger in oil in a saucepan, covered, over medium heat until onions soften, 11-12 minutes.

Whisk in maple syrup, lemon juice and Dijon for the vinaigrette.

Toss sprouts and walnuts with vinaigrette; season with salt and pepper.
