Chicken-Fried Chicken

Ingredients

  • 2 cups vegetable oil for frying
  • 3/4 cup crushed saltine crackers
  • 2 tbsp dry potato flakes
  • 2 tbsp flour
  • 1 tsp seasoned salt
  • 1/2 tsp black pepper
  • 1 egg
  • 1 tbsp water
  • 6 chicken breasts

Directions

  1. Heat oil in a 12-inch skillet over medium heat, about 15 minutes.

  2. Meanwhile, put crushed crackers, potato flakes, flour, seasoned salt, and pepper in a large Ziploc bag. Seal bag, then shake to mix well.

  3. Whisk egg with the water in a shallow bowl. Dip each chicken breast in egg mixture, then put in bag with crumb mixture. Seal bag, then shake to coat.

  4. Add chicken to skillet; cook, turning frequently, until golden brown and cooked through, 15-20 minutes.
