Ingredients
- 2 cups vegetable oil for frying
- 3/4 cup crushed saltine crackers
- 2 tbsp dry potato flakes
- 2 tbsp flour
- 1 tsp seasoned salt
- 1/2 tsp black pepper
- 1 egg
- 1 tbsp water
- 6 chicken breasts
Directions

Heat oil in a 12-inch skillet over medium heat, about 15 minutes.

Meanwhile, put crushed crackers, potato flakes, flour, seasoned salt, and pepper in a large Ziploc bag. Seal bag, then shake to mix well.

Whisk egg with the water in a shallow bowl. Dip each chicken breast in egg mixture, then put in bag with crumb mixture. Seal bag, then shake to coat.

Add chicken to skillet; cook, turning frequently, until golden brown and cooked through, 15-20 minutes.
