Spaetzle

Ingredients

  • 4 cups flour
  • 5 eggs
  • 1 tsp salt
  • 3/4 cup water
  • 2 tbsp butter
  • 3 tbsp chopped fresh herbs

Directions

  1. Bring a large pot of water to a boil.

  2. Meanwhile, stir together flour, eggs, and salt in a large bowl. Gradually stir in water until a soft dough forms. Carefully squeeze dough through a noodle press or push through a large-hole colander into boiling water. Boil until noodles begin to float, 3-4 minutes. Drain well.

  3. Heat butter in a large skillet over medium heat. Working in batches if necessary, add spaetzle; cook, stirring, until beginning to brown, about 5 minutes. Add herbs; toss to combine.
