Ingredients
- 4 tbsp. olive oil
- 3/4 lb. skirt steak
- 1/4 head radicchio, thinly sliced
- 2 oranges, segmented
- 4 oz. blue cheese
- 1/2 cup mayo
- 8 slices pumpernickel bread, toasted
Directions

In skillet, heat 3 tbsp. oil over high. Season steak; cook 3 minutes per side for medium-rare. In medium bowl, toss radicchio, oranges and remaining 1 tbsp. oil; season salad. In small bowl, mash cheese with mayo; spread on 4 slices of toast. Slice steak against grain. Build sandwiches with toast, steak, and salad.
