Beef with Okra and Tomato

Ingredients

  • 3/4 to 1 lb. beef cubes
  • 2 boxes frozen okra
  • 1 small can tomato paste
  • salt and pepper
  • lemon juice
  • long-grain rice
  • vegetable fat
  • Salt

Directions

  1. Boil beef until tender in water, then sear in skillet. Add 2 cups water then okra and tomato paste. Cook until well done. Add salt, pepper and lemon juice to taste.

  2. For each cup of long-grain rice, use 2 cup water. To 2 cups boiling water, and 1 Tbsp. vegetable fat and salt. Bring to a boil. Add rice3 and boil vigorously for 10 minutes. Reduce heat to low temperature and let water evaporate. Do not cover; do not stir. Serve beef over rice.
