Chicken Enchilada’s

Cook time: 40 minutes
Serves 4 people

Ingredients

  • 1 Cup shredded chicken
  • 1/2 Sweet Onion - diced
  • 1/2 Brick of Cream Cheese
  • 1/4 tsp Cumin
  • 1/4 tsp Chili Powder
  • 1 tsp prepared garlic
  • 2 TBSP Chopped Cilantro
  • 1 TBSP Olive Oil
  • 1 Cup Shredded Mexican Blend Cheese
  • 1 TBSP Tap Water (H2O)
  • 8 Corn Tortillas
  • 1 Can (28 oz) Western Family Green Enchilada Sauce

Directions

  1. 1) Lightly Fry up 8 corn tortillas, both sides, olive oil or olive oil spray. Set aside.

  2. 2) In a bowl, combine Chicken, Onion, Cream Cheese, Cumin, Chii Powder, Garlic, cilantro, olive oil, water. MIX well.

  3. 3) Grease/Spray a 13×9 baking pan.

  4. 4) In each corn tortilla, place about 2 TBSP of chicken mixture, lightly roll. Place in baking pan.

  5. 5) After pan is full – Pour the full can of sauce on top and sides.

  6. 6) Bake @ 350F. for 30 minutes.

  7. 7) Remove from oven, top with cheese, bake @ 350F for 10 more minutes.

  8. 8) Remove and let cool.
