Beef and Spinach Pinwheels

Ingredients

  • 4 oz. lowfat cream cheese, softened
  • 1 Tbsp. prepared horseradish
  • 4 (8 oz.) whole-wheat or flour tortillas
  • 1 1/2 cups baby spinach leaves
  • 6 oz. thinly sliced deli roast beef
  • 4 oz. sliced lowfat provolone cheese

Directions

  1. In small mixing bowl combine cream cheese and horseradish.

  2. Spread on 1 side of each tortilla. Top each with spinach leavers, roast beef and provolone cheese. Tightly roll up. Wrap in plastic wrap. Refrigerate 1 to 24 hours.

  3. To serve, cut each tortilla in 1-inch pieces.

  4. makes 32 pieces
