Beefsteak and Kidney Casserole

Ingredients
- 1 lb. beef stew meat3/4 lb. lamb kidneys
- 1/4 cup flour
- 1/4 tsp. ground sage
- 14 tsp. ground thyme
- 1/8 tsp. black pepper
- 2 Tbsp. shortening or bacon fat
- 3/4 cup hot water
- 1 Tbsp. instant minced onion
- 1 Tbsp. parsley flakes
- 1 Tbsp. celery flakes
- 1 1/2 tsp. salt or to taste
- Mashed potatoes
Directions

Remove and discard all excess fat from beef and kidneys; cut into 1-inch pieces. Dredge in flour mixed with sage, thyme and pepper. Brown in shortening. Add next 5 ingredients; turn into 1- quart casserole. Cook, covered, at 350 degrees for 1 hour or until meat is tender. Remove casserole from oven; spoon border of hot, fluffy mashed potatoes around edge. Return to oven for 10 to 15 minutes.
