Cheesy Crispy Potatoes

Ingredients

  • 2 lb small potatoes, such as baby Yukon gold or petite red potatoes
  • 3 Tablesppon olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/2 cup shredded Parmesan cheese

Directions

  1. Preheat oven to 425°F. Bring potatoes and water to cover to a boil; simmer 12 minutes or until potatoes are tender. Drain potatoes; pat dry.

  2. Toss potatoes with oil, salt and pepper; arrange on a rimmed baking sheet. Smash potatoes gently using the heel of your hand or a spatula.

  3. Bake potatoes 8 to 10 minutes per side or until outsides are crisp.

  4. Sprinkle with cheese. Bake 3 minutes or until cheese is melted.
