Pierogi Beef Skillet

Ingredients

  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1/4 cup all-purpose flour
  • 1/2 tsp Italian seasoning
  • 1/2 tsp pepper
  • 1/8 tsp salt
  • 14.5 oz. can beef broth
  • 16 oz. frozen cheese and potato pierogis, thawed
  • 2 cups frozen mixed vegetables, thawed and drained
  • 1/2 cup shredded cheddar cheese

Directions

  1. In a skillet, cook and crumble beef with onion over medium until no longer pink, 5-7 minutes; drain, reserving 3 tbsp. drippings. Stir in flour and seasonings. Gradually stir in broth; bring to a boil. Cook and stir until thickened, 1-2 minutes.

  2. Stir in pierogis and vegetables. Cook, uncovered, until heated through, about 5 minutes, stirring occasionally. Sprinkle with cheese.
