Ingredients
- 2 tbsp. vegetable oil
- 1 beaten egg, cooked and sliced
- 5 slices bacon, cooked and chopped
- 2 buttered toast slices, chopped
- 2 cups leftover rice
- Topping:
- Chopped fresh chives
Directions

In a medium skillet, heat oil over medium. Add remaining ingredients except for topping and stir-fry until cooked and browned in spots, 3-5 minutes. Add rice and stir-fry until heated through. Drizzle or sprinkle with toppings.
