Hash Browns

there are plenty of ways to make ’em and we like them all.

Serves 2 people

Ingredients
- 4-6 Red/New potatoes
- 1 tsp Salt
- 2 Tbsp peanut oil
- 2 cloves minced garlic cloves
- 1 medium yellow onion
- 1/4 tsp Cayenne
- 1/2 tsp Paprika
Directions

Cut potatoes into 1/2-inch cubes.

Place in pot with water, salt, and bring to a boil.

Cook until just under done.

Heat skillet to HOT (cast iron preferred) until oil is shimmery.

Put potatoes, onions, and garlic in skillet.

Stir/flip frequently.

Sprinkle cayenne, paprika, salt, and freshly ground pepper over food.

Cook until onions are translucent.
