Ingredients
- 3/4 lb. ground pork
- 3 garlic cloves, sliced
- 3 star anise pods
- 2 tsp Szechuan peppercorns, crushed
- 3/4 tsp granulated onion
- 8 cups chicken stock
- 3 tbsp. red miso
- 24 oz. fresh egg noodles, cooked
- 5 oz. baby spinach
- 2/3 cup fresh cilantro

In wide saucepan, cook first 5 ingredients over medium-high, stirring and breaking up pork with spoon, until browned, about 6 minutes; season. Add stock and miso; boil for 10 minutes. Discard star anise. Stir in noodles and spinach. Divide among bowls; top with cilantro.
