Cider-Glazed Apple Bundt Cake

Ingredients
- 4 cups apple cider, reduced to 1 cup
- 2 sticks of butter, melted
- 3 eggs
- 1-1/2 pounds of granny smith apples, grated
- 2 t. vanilla
- 3-3/4 cups flour
- 1-1/2 teaspoon salt
- 1-1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon allspice
- 3/4 teaspoon cinnamon
- 1-1/2 cups brown sugar, packed
- GLAZE
- 1/2 cup confectioners sugar
- 2 tablespoons reduced cider

Preheat oven to 350F

Reduce apple cider in a pan on top of the stove to 1 cup. Divide into 1/2 cups.

Combine 1/2 cup of confectioners sugar and 1/2 tablespoon of reduced cider and mix until combined. Cover with wrap and set aside.

Mix the flour, baking powder, baking soda, cinnamon, allspice in a bowl; In another bowl, combine the brown sugar, 1/2 cup reduced cider, butter, eggs, vanilla, and grated apples. Mix until brown sugar is dissolved.

Add the brown sugar mixture to the flour and mix just until well combined.

Grease and flour a bundt pan well and pour the batter. Bake for about 55 min or until a toothpick comes out clean.

Take 3 to 4 tablespoons of the reserved cider and pour over cake still in the pan. Allow it cool for about 10 minutes; turn it over a tray; take the glaze and pour it over the warm cake. Allow it to cool another 20 minutes before serving
