Ingredients
- 1 lb. halved small Yukon Gold potatoes
- 2 tbsp. olive oil
- 1 tbsp. chopped fresh oregano
- 2 tsp minced fresh rosemary
- 2 tsp paprika
- 3 tbsp. chopped, pitted Castelvetrano olives
- 1 tbsp. olive oil
- 1 tbsp. fresh chopped parsley
- 1/4 tsp kosher salt
Directions

Toss together potatoes, olive oil, oregano, rosemary, and paprika on a parchment paper-lined baking sheet. Bake at 400 for 25 minutes, stirring after 10 minutes. Toss with olives, olive oil, parsley, and salt.
