Broccolini Slaw

Ingredients

  • 2 tbsp. apple cider vinegar
  • 2 tsp Dijon
  • 1 tsp honey
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup water
  • 14 oz. broccolini, cut into 1-inch pieces
  • 1 cup matchstick-cut carrots
  • 1/2 cup julienned-cut golden beet
  • 1/4 cup thinly sliced red onion
  • 1/4 cup sunflower seeds

Directions

  1. Combine vinegar, Dijon, honey, salt and pepper in a small bowl. Bring water and Broccolini to a boil in a large saucepan over medium-high; cover and cook 5 minutes or until tender. Drain; rinse with cold water. Drain.

  2. Combine broccolini, carrots, beet, red onion and sunflower seeds in a large bowl. Add vinegar mixture; toss. Let stand 10 minutes.
