Ingredients
- 2 tbsp. apple cider vinegar
- 2 tsp Dijon
- 1 tsp honey
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup water
- 14 oz. broccolini, cut into 1-inch pieces
- 1 cup matchstick-cut carrots
- 1/2 cup julienned-cut golden beet
- 1/4 cup thinly sliced red onion
- 1/4 cup sunflower seeds
Directions

Combine vinegar, Dijon, honey, salt and pepper in a small bowl. Bring water and Broccolini to a boil in a large saucepan over medium-high; cover and cook 5 minutes or until tender. Drain; rinse with cold water. Drain.

Combine broccolini, carrots, beet, red onion and sunflower seeds in a large bowl. Add vinegar mixture; toss. Let stand 10 minutes.
