Panko-Crusted Broccolini

Ingredients

  • 1/4 cup panko
  • 1/4 cup grated pecorino Romano
  • 2 tbsp. chopped flat-leaf parsley
  • 1 tsp grated lemon rind
  • 1/2 cup water
  • 14 oz. broccolini, trimmed
  • 2 tsp olive oil
  • 1 tsp minced garlic
  • 1/4 tsp kosher salt

Directions

  1. Preheat broiler to high. Combine panko, Romano, parsley and lemon rind in a small bowl. Bring water and broccolini to a boil in a large ovenproof skillet.

  2. Cover and cook 6 minutes. Uncover and cook 30 seconds. Remove broccolini from pan. Add olive oil and garlic to pan; saute 30 seconds. Stir in broccolini and salt. Sprinkle panko mixture evenly over pan. Broil 2 minutes or until lightly browned.
