Chicken Tacos with Apple Salsa and Guac

Ingredients

  • 2 avocados, halved and pitted
  • 2 tbsp. grape seed oil
  • 2 tsp fresh lime juice
  • Kosher salt
  • 1 large Fuji apple, chopped
  • 1 red bell pepper, chopped
  • 1 stalk celery, finely chopped
  • 1 tbsp. apple cider vinegar
  • 1 tsp chopped fresh mint
  • 1 tsp ground cumin
  • 1 tsp honey
  • 12 small flour tortillas, charred
  • 1 1/2 cups shredded leftover chicken, warmed
  • 1/3 cup shredded cheddar
  • 1/3 cup sour cream, thinned with a little water

Directions

  1. Scoop out the avocados from the skins into a small bowl. Mash in the oil and lime juice; season the guac with kosher salt. In a medium bowl, mix the apple, bell pepper, celery, vinegar, mint, cumin, and honey; season the salsa with kosher salt. Build the tacos with the tortillas, chicken, guac, salsa and cheese. Drizzle with the sour cream.
