Ingredients
- 2 avocados, halved and pitted
- 2 tbsp. grape seed oil
- 2 tsp fresh lime juice
- Kosher salt
- 1 large Fuji apple, chopped
- 1 red bell pepper, chopped
- 1 stalk celery, finely chopped
- 1 tbsp. apple cider vinegar
- 1 tsp chopped fresh mint
- 1 tsp ground cumin
- 1 tsp honey
- 12 small flour tortillas, charred
- 1 1/2 cups shredded leftover chicken, warmed
- 1/3 cup shredded cheddar
- 1/3 cup sour cream, thinned with a little water

Scoop out the avocados from the skins into a small bowl. Mash in the oil and lime juice; season the guac with kosher salt. In a medium bowl, mix the apple, bell pepper, celery, vinegar, mint, cumin, and honey; season the salsa with kosher salt. Build the tacos with the tortillas, chicken, guac, salsa and cheese. Drizzle with the sour cream.
