Mediterranean Chicken and Quinoa Salad

Ingredients
- 1/2 cup quinoa
- 11/2 cups cooked shredded chicken (see note)
- 1/2 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped fresh mint
- 1/4 cup sliced green onions
- 1 pint grape tomatoes, cut in half
- 1 small cucumber, chopped
- 3 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup crumbled feta cheese
Directions

Cook quinoa according to package

directions; place in a bowl, and cool. Add

chicken, parsley, mint, onions, tomatoes and

cucumber. Whisk together oil, lemon juice, salt

and pepper in a bowl. Add to quinoa mixture

with cheese; toss. Pack in 4 containers; chill

until ready to serve.

Note: Use a rotisserie chicken or any leftover cooked chicken
