Mediterranean Chicken and Quinoa Salad

Serves 4 people

Ingredients

  • 1/2 cup quinoa
  • 11/2 cups cooked shredded chicken (see note)
  • 1/2 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup sliced green onions
  • 1 pint grape tomatoes, cut in half
  • 1 small cucumber, chopped
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup crumbled feta cheese

Directions

  1. Cook quinoa according to package

  2. directions; place in a bowl, and cool. Add

  3. chicken, parsley, mint, onions, tomatoes and

  4. cucumber. Whisk together oil, lemon juice, salt

  5. and pepper in a bowl. Add to quinoa mixture

  6. with cheese; toss. Pack in 4 containers; chill

  7. until ready to serve.

  8. Note: Use a rotisserie chicken or any leftover cooked chicken
